Visited the HMT museum & this bit caught my eye: their security team still uses wax & seal to lock the building's entry. Ofc, this vintage seal is an additional layer of security over the main lock, but something about a nod to the yesteryear brought my old-school heart joy 🔒🕯️

Yams are an underrated hero: 16% fibre & 23% potassium & full of vitamins C & B6 (per 100g)
My hack is to get these bad boys pre-diced from BigBasket, marinate them using Not Just Hot sauces & bake them at 200C for 25-30mins.
Move over aloo, this is what yam talking bout.

A very important question we find ourselves asking at Local Ferment Co. Where do we stand if this is the "industry standard"?
Take our Mango & Chili Kombucha for example. It would've been easy for us get a mango concentrate/natural flavour. It's certainly way cheaper & easy to procure.
But each day we choose fresh Alphonso mangoes to flavour our Kombucha. Which is why you'll find it tasting fibrous &
