I have 10 years of experience in the restaurant industry. I am certified in food safety. You are absolutely wrong here in how long it takes to go bad. It takes far longer up to about an hour you are good preferably 15-30 minutes is what I would go off of.

Very few if any restaurants boil alive nowadays. The bacteria and enzymes that cause them to go bad takes far longer than people used to believe. Most restaurants kill them right before cooking nowadays. Do you even have kitchen experience?
