I got a hint on Ancestry that may have led to the discovery of one of my African ancestors. It actually has her birth location listed as Guinea, Africa. That’s where she was born in 1789 and she died in New Orleans in 1834.

This was in my memories today. Crawfish étouffée that my mama made for me when I came home to visit. The key to a making a creamy sauce is to let the roux and vegetables cook down for a while. Also, don’t add too much liquid. Most of it should come from the crawfish or shrimp.
