Nobody produces both gametes, there has never been a single documented case of that ever happening. If someone produces neither gamete then you would look at what they would produce if everything was functioning normally.

Interesting fact, there have been recent studies that prove if you don’t affirm a gender dysphoric child’s chosen gender, then 80-90% of the time, they will grow out of the gender dysphoria by the time they reach the end of puberty. And will likely just be homosexual.

Defining sex in terms of gamete type is not "essentialist," it's reductionist. Studying complex systems by reducing them to their simpler, constituent parts plays a critical role in science.

The main thing you’re overlooking is that what gender dysphoric people are trying to achieve is biologically impossible. You could say that transitioning would help the depression and anxiety associated with being gender dysphoric… but you’d be wrong.

That’s not necessarily true. Desistance can refer to anyone that is gender dysphoric regardless of their transition status.
Gender dysphoria is a mental illness in which the subject has a strong uncomfortable relationship with their birth sex and a strong desire to be another sex

Sex is defined by gametes. Sperm= male
Eggs= female.
