I definitely struggled with this flour 😅 It shaped funny & fell flat before scoring. I added ice cubes to the covered bake, hoping that would help with oven spring. Currently uncovered still in the oven 🤞🏻

My loaves fell flat this week 🫣 I could tell when I was shaping them something was off. They were more sticky than usual & not cooperative if that makes any sense 😂
Still trying to figure out if it was my starter or lack of time during bulk rise 🤷🏻♀️

The spelt flour is super soft to the touch & smells amazing just after mixing in the starter, water & salt. Super excited to see how this loaf turns out 💁🏻♀️

A few weeks back, I thought my Kitchenaid broke.
When I was mixing sourdough discard sandwich bread, it was too dense and too much & my Kitchenaid started smoking 😅
I can happily say it is not broke! It simply can't handle brick like bread lol

Yes! I love the flavor of the spelt flour, especially the crust. I left this one in the fridge over 24 hours for the cold proof, so definitely puts the sour in

Yesterday's loaf 🥖 this loaf was a little off. It didn't shape right & I didn't use enough steam during the bake. I've definitely done better BUT I've definitely done worse lol my husband & daughter still loved it and that's what this is all about ❤️

Add inclusions during shaping
-I do a laminate fold for shaping, spread the dough out into a large rectangle & add Jalapeños & cheese
-Fold in left side halfway, add more Jalapeños & cheese
-Fold in right side, add Jalapeños & cheese
