13/2/2015 , 7 years ago today Carmel and I embarked on our adventure into the restaurant business. We have come along way since those steps upstairs above the exchange bar on ballybricken, we are very proud of our journey and tonight are celebrating with a nice Brunello.

Trialing new dessert. Peach Melba muille fuille. . Fuille de Bric layers, peach fluid gel, raspberry gel, creme pat, fresh raspberries and vanilla ice cream. Peaches were cooked down with sherry vinegar , honey and thyme. @GalwayLoam long day.
