@mattyglesias Demand is much more inelastic for eggs than chickens b/c people can swap b/w chicken/beef/pork and you can raise a roaster chicken far faster than layer chickens. Also the growers that do eggs only do eggs and a lot of customers insist on cage free chicken houses - not cheap.

@mbeisen The government sets the indirect rate when it audits each university and calculates the rates for each school individually - and it is the government that mandates many of those costs (compliance and data collection/preservation requirements and such).
