Israel took it because it was constantly attacked by Syria from the Golan. There were offers on the table to give the Golan back for peace same as Sinai went back to Egypt but Syria rejected peace.

In 1948 Israel had almost no weapons. 3 soldiers had to share one rifle. Nobody helped with superior weapons. All the invading Arab armies had superior weapons and way more soldiers.
