This is some of our recent Dry-Cured Pepperoni cut length-wise. Notice on the right the meat looks like it was almost stuffed at an angle, the meat is obviously traveling in a downward direction, this is from holding the casing too tightly.
Meat Hack: All you have to do is slide the fork under the tendon at one end of the chicken breast, then using the fork to hold the chicken in place, you grab the end of the tendon with a paper towel and pull up. In one single, glorious motion the chicken is freed from its tendon.

MEATHACK MONDAY: Keeping your meat cold through the grinding and stuffing process is going to speed things up and give you a better finished sausage. A good tip to help you with that is to put your grinder head, auger and plates and knives in the freezer prior to grinding.

The downside to collaen casings is that they do not accept a twist like natural casings do. 1 way to help is to twist and then freeze them before cutting. This will allow the it to stick to the meat and will give you a better-looking brat once it has been grilled!
