Analytics apps are mostly real-time, Stripe dashboard isn't. It's a huge difference in architecture for both of them.
For things like Stripe dashboard I would probably use combination of PostgreSQL + Redis for caching, for real-time analytics app I would use Supabase Webhooks

I store only customer stripe id and plan name (just to display it to the user without calling stripe api). Rest info are directly from stripe api.
If you plan to have multiple payment providers architecture then the solution would be much different.
