Why on earth should we refuse to eat our cuisine? White people will come to india and the restaurants will make stupid roasts and toasts for their palette. Yet when Indians with disposable income visit France, they must eat a bland crow’s aunt.
Indians as a people are absurdly attached to the Indian taste. So much that many prefer Indian food even when vacationing abroad. The survival of international chains here depends on how well they Indianise their menu. We *refuse* to leave our comfort zone when it comes to food.

Not sure about other cities but in Delhi you'd meet a lot of people from smaller cities who'd talk to you about Rafi and Rahe Fateh Ali Khan. They'd talk about rustic romanticism of Delhi. Living in crampy South Delhi apartments.

Funny thing about Bangalore is, neither are migrants powerful enough to convert it into a city with completely new identity (like Mumbai’s Jain Gujju businessmen) nor the locals aggressive enough like Chennai to force cultural compliance. So you have 2 cities with no city centre
