3: PESTO. This was the year of pesto for me. I always thought homemade pesto was a faff but it is actually a great quick meal & a good way of using up the ends of herbs/greens & making them sing. This is kale, chilli & walnut, and I also added some anchovy paste

Ixta Belfrage posted this 12 min spicy tuna ragu on her insta and it’s unreal & so quick. You add all the ingredients at once apart from the parmesan and cream which you add once you’ve mixed the pasta in w the ragu. Also reserve a lot of pasta water to loosen it up

5: Ixta Belfrage’s prawn lasagne. A REVELATION. I did not think prawns would work in lasagne form but, minced & infused in a ragu, they really do. This is a work of art & doesn’t involve making a bechamel (one of the least enjoyable things to make imo)
