It took a little longer than expected, but @CorinaHardgrave got it right with her prediction about @LignumGalway, back in 2022. Wonderful to see hard work, determination and authenticity being recognised.
A beautiful room, food and experience @LignumGalway reviewed in today’s @IrishTimesMag Lignum is the Latin for wood, and that drives all the wonderful flavours here, brooding, complex and thrilling. Mackerel, lamb and exquisite peas were standouts.
