Last post for today. One of our units is leaving for assignment. I’m experimenting with food that can last a up to one week, can be easily transported in large quantities, is easily prepared, tastes good and has balance. First try: half a chicken, taters, beans, broccoli, sprouts
Exactly 1 year ago I woke up and told all my employees that we will open all our restaurants on schedule. There was no point in panicking, this was the best cours of action and I assured everyone that I’m not leaving Kyiv even if this turns into partisan war.

Friday night. Boys just came back from work. We call it “work” because it is their job to defend our country. A service to our people much like any cooks service to nourish them. Many of you asked what’s their favorite? Well - mostly they ask for BBQ and burgers. And we deliver)
Reinforcements arrived right on time. Today we rotate with my cooks from Kyiv. Back home for two weeks to setup our HQ for international volunteers. We don’t rest until 100% of our country is liberated and we return all our citizens who were imprisoned and sent away by moskovits
Tonight i leave you with this. This is what 90% of our field kitchens look like. Powered with FIREWOOD. I am not joking. If there is one thing i plan to do in the next five years is get make sure all this junk is never used by future generations of Ukrainian warriors and chefs.

When our boys are leaving on a mission it’s only BAD NEWS for the invaders. We continue experimenting and improving meals in the fields. This is the setup we find is the best for mobile units.
3/ a fully formed battalion consumes 200kg of soup EVERY DAY. A brigade of five battalions 1000kg of soup every day. Which means 365 000 kg of soup is consumed by just 1 brigade every year. Right now we have approximately 175 fully formed brigades - do the math! Soup soup soup!

Lunch at the base: borsch, dark bread with pork lardo and raw onions, pork schnitzel with mushroom sauce, taters, fresh veggies & pickles, some cold spiced tea with condensed milk.
Ok2/ No Ukrainian soldier, perhaps no Ukrainian. can imagine lunch without soup. That’s what yo moma and you grandma cooked and many generations before them. This is lunch we served from a food truck on a military base. Soup is 1/3 to 1/2 of any lunch!
You know what, I don’t see absolute no downside to making a lot of pork roast. It keeps for a very long time. it’s good in sandwiches, pasta, pizza, salads, basically anything. It’s delicious. D E L I C I O U S.
I vote this the best sushi in Kyiv. It just superior to what Goodwine, le Silpo, Mafia family expansive restaurants and even Hilton (which does have the best price/value steak in the city). Rice so good. Fish - Delicious
Just went shopping, got everything to film the recipe for ya’all. BONUS - a few small recipes along the way. I’ll cook chicken separately to use the meat for the soup and the carcass to make the broth, we’ll pickle the leftover beets and you’ll learn the Ukrainian way to eat it.
