I have written about African food, why it is perceived as unhealthy and why substituting ingredients in indigenous dishes with obscure western ingredients is lazy work.

If you want to be a healthy food blogger and your niche is Ghanaians/Africans, does it not sense to actually learn our food and ingredients instead of finding ways to include chia and inaccessible ingredients in every breakfast dish?
Called carpenter because key is broken. Carpenter comes to open door. We all enter and he shuts the door and the door locks again. Now we’re stuck inside with his tool box outside. We’re waiting for a new carpenter.
People are saying in the qts there’s a reason Italian food is on the list of top cuisines and African food isn’t and I want all of you to think critically about why that is so. You honestly believe that your food is on it because it’s the best? Who created these lists?
Beloved when Labrinth was crying about how he’s jealous of the rain that falls upon his ex’s skin in an empty theater wearing a mustard sweater where were you?
“ I wish I met you before my wife”.
A Ghanaian man whose wife is currently pregnant with their 6th child and will wear matching fabrics to church on Sunday.
They are quite literally pricing poor people out of Accra. Trotros were the cheapest means of transport for everyone who couldn’t afford taxis or didn’t own cars. Now fares are as high as 15ghs to move within Accra. This is the same place where some families spend less than 1/
Strawberry isn’t the bad bitch she thinks she is but GRAPES…mmm what a Queen. The silent og who has been consistent across generations. Look at how many lives wine has saved.
Which group of people decide which cuisines go on these list? What do they all have in common? You mean the people who call other foods outside of their usual “ethnic” did not add more diverse cuisines to the list?? Gasp!!
African cuisine especially uses a lot of fresh ingredients. Do you think tomatoes and basil and other fresh herbs only grow in Italy? Is that what you all think? That we’re here cooking with powdered spices and that’s it?
Ghanaian HRs are the reason you are underpaid. They think intentionally recommending that you be underpaid scores them points with the company. International companies are always willing to pay right until they listen to the recommendation of the Ghanaian HR person. Wicked people
Racism has shaped our perception of what is great food and what isn’t. No one asked Italians to use all the seasonings in the world. All we said was season your food and you assumed we were talking about msg and old bay. Okay fine but your food will taste better with some msg
To the “ special Black people” who have had amazing experiences at some of these places; thank you for being special enough to feel safe enough to have fun in these countries. It certainly invalidates all other experiences. You are a Special Black.
I totally understand that some people do not have a diverse palette. Sorry to those people but good food is good food everywhere. It doesn’t need to taste like anything I know. Unseasoned food is also unseasoned food everywhere and Italian and a lot of other European…
Like have you lot tried Haitian food? Grenadian food? Ghanaian food? Jamaican food? Thai food? These people are using fresh ingredients. They are making marinades from fresh ingredients to amp up flavour. I bet you’ve never heard anyone say Jamaican food is bland.
My niece said Gorath instead of Goliath and my sister panicked so hard she stopped everything she was doing to go through words that have R & L to be sure there wasn’t an issue. Turns out the lady at church is the one who told them it was Gorath.
foods are under seasoned. The creams is not going to hide how bland everything else is. You need acid baby. Maybe a bit of sweetness to balance that sourness. You need something. Find it. All the indigenous cuisines in the world use fresh produce. Almost all indigenous recipes
* I hope you all know that ‘ girl you might die’ is a funny expression and not to be taken literally, except when it comes to America of course. Thought I should share before you go off on a tangent.
That said go wherever you want. I certainly would. Be careful though.
I went through uni not cooking on campus, not even once, because my roommates and friends were convinced I couldn’t cook and I leaned heavily into that schtick. My plan is to never exceed anyone’s expectations of me.
Whilst we’re talking about intellectual property theft,
@hubtel
stole my images. Used said images to promote their app and even used one as an ad on here. When I spoke to them on the phone their marketing manager said “what proof do you have that the images are yours?”
Often when we talk about racism and the numerous ways it manifests we forget how intense and deep racism also affects food n the positioning of other cuisines on the global stage. Representation for African cuisine is almost non existent. We are not even part of the conversation
And to the Americans centering themselves as usual in this conversation; I know it’s incredibly hard but maybe, just for this one time, consider that you are not the only Black people in the world. Black people exist in Africa. We are not talking abt American passport holders pls
You know which people should be in the room?? LatinsX, Asians, Africans; their cuisine is more diverse. Their cuisine features simple straightforward dishes made with basic simple ingredients and also really complicated dishes that are expertly balanced. They have the range
Like people who think black pepper and salt is all the seasoning you need for every dish should not be judging anyone, tbh. They can never appreciate how diverse food can be. They shouldn’t even be in the room when conversations are being had.
Yesterday ECG took my lights as I was going through a Lightroom album with a client. Super upsetting btw but then I asked myself; who needs the lights more?? Surely all the industries Nana has built and are operational. They need it more to provide us with the resources we need.
Europeans do not have the range to determine what makes a great meal, sorry. Once again to the special Blacks, do you see how they are talking about your food in the comments and quotes? You will never belong but sure, it must feel good to suddenly hate seasoning.
@PapaKojoAmpofo
Almost everyone I know who has been to France, especially as a dark skinned person, did not have a great experience. It sucks because where can we travel to because I really want to go to France.
They are pushing as out so they can promote an image where Accra is this fabulous place to entice the diaspora to invest and stay. We are priced out of everything; food, healthcare, rent, utilities etc. How ridiculous is that? 4/
use only fresh ingredients. And to the special Blacks, your palettes are so refined and African and AA food is so beneath you because they use other spices to enhance flavours. How hard it must be for you to watch paprika being poured on chicken. So sad.
I’m withdrawing my bid for the national cake. Today is the final day. This has been real fun in my otherwise very important and serious life 😂. To quote my favorite philosopher Kojey Radical, “ name a politician who gave a fuck about your feelings .”
Happy weekend.
10ghs a day on food. Pure water is 50p. Some people survive on 5ghs daily. Buy even 4 pure water and you are left with 3ghs. How do they expect poor people to survive? I’m using poor here for everyone who doesn’t own homes or cars or aren’t part of the upper echelon. 2/
People live at Kasoa and work at Tema. The mental toll on their health and just quality of life in general is horrible to watch. Accra is uninhabitable for regular Ghanaians. The only people thriving are the diaspora and the wealthy and I think honestly that is their plan 3/
You are fighting for these people and calling your own people names. They said you food is dirty and has worms and your palette is dead and your food is disgusting and stinks. They said you go to the forest to catch bush meat. I hope you saw that.
How do they get truffle?
Thanks to insta fashion analysts, I know the Second Lady own bags that cost over $20k. So now I have questions. First, are these real or Banku Birkins? If they’re real, how can she afford such expensive bags?
It’s because you’re carrying shame that isn’t yours to carry. It almost feels like it’s your fault that this is happening and so instead of directing blame at the person doing this to you, you blame yourself. It also stems from believing that we are beyond certain situations.
We really are obsessed with making African/Ghanaian cuisine appealing to the white gaze. Just saw someone describe bofrot as donut holes. Almost every country has a version of doughnuts. It almost always has a different texture and process. Donut holes is not bofrot.
You can’t afford to eat, you can’t go to work, you might not even have a job. You are stressed, overworked, overwhelmed, sad, underpaid, not paid, depressed. Ohhh it’s a mess. I can’t. Hunger and poverty breed violence. 15/
People run in traffic all day long selling just to make 5 - 10ghs profit and now they need to pay e levy on everything? There is a special kind of wickedness and callousness that African politicians excel at and this makes them a danger to our lives. 8/
Honestly I am enraged because how are poor people supposed to eat, feed their kids and just generally not starve to death. A cup of rice is 8ghs+. Do you know what this means? If you survive on less than 10ghs a day you cannot eat rice. Or you can but just the steamed rice. 5/
Once again because I have to do this every couple of months; I am not African American but it is interesting that you always assume that a Black person could not be anything else but AA. Before you start being racist to them and start attacking them, I am not African American.
Eggs have been the cheapest source of protein for decades and now you can’t afford it. People are one sickness away from homelessness. People are going insane, literally. Look at the number of ‘mad people’ we have on the streets. This is no coincidence. 6/
Breakfast chains aren’t rare nor are they spurned. You expect them to be presented in a way that isn’t authentic to our eating culture. You don’t acknowledge their validity and existence because they don’t mimic the West. This is a presentation issue and that’s a different convo
In the US, you see Starbucks, Panera, Waffle House etc. In Europe, Costa, Pret, Caffè Nero etc. In Kenya & South Africa, you see Mugg & Bean, Java House etc. Why are breakfast chains so rare in West Africa? Why is breakfast so spurned? Koko King tried paa & learnt the hard way🤦🏽♂️
How can you skip the man chatting nonsense and go directly to his wife. Why must women be collateral damage because the men in their lives can’t stay out of other women’s business?? Why is it always women being shamed?? Why do women pay when men behave badly? Drag the man.
I’m sorry for this long rant but if poor people cannot afford rent, food, cannot afford to live then what is the point? Most of the development in this country is concentrated in Accra so going to your village is not an option for most. They are no jobs there too. 11/
You take your little trips and hang out with your little friends whilst the people who are responsible for this excess you enjoy starve to death. I wish you all nothing but the worst. Really, I do. You are not good people. 10/
When you do your job well there is a sort of joy and pride that it brings. You’ve seen first hand all the people benefiting directly from your hard work. Cheers to these powerful humans and cheers to those who’ll come after them. We need you.
I’ve not been one to judge politicians kids by the sins of their parents but I’m not so sure now. The country is burning, quite literally and figuratively and you sit in your air conditioned homes looking pretty. Look all around you, does everything look okay to you? 9/
If you had to calculate everything single thing that affected your quality of life down to the minute details, you too will go insane. Do you think they care? I understand that they are thieves and can’t stop stealing but can they not at least take a break and do the work? 7/
There’s a new kind of food influencing that focuses heavily on aesthetics. “Ouuu their lights are so cute. This is so luxurious. Their chairs are pretty “. This is a really popular trend right now so the new restaurant are investing heavily in looks and hoping…1/
Not everyone is a farmer. The lands left have been destroyed with galamsey. Water bodies are polluted. I knew it was utter shit when villagers started purchasing pure water because their water bodies had been polluted with chemicals form galamsey. 12/
Okay I’m going to be a hater today. Most of the new Ghanaian food critics are influencers who think being paid to eat on camera and saying “it’s nice or I like it” is enough. They provide no feedback abt the service, value bcos they are uncultured when it comes to this art form.
The art of vendoring wares in Accra, the capital of Ghana is an art form that’s often overlooked. The skill and flare employed by street vendors centred in Numèro’s photo issue.

I would never get over how this man has been rebranded as the kind firm father figure when so many families haven’t recovered from the damage and harm he inflicted upon them. It’s honestly the gag of the century.
It’s been 20 yrs since Rawlings left office after 19 yrs as ahead of State. Tune in to part 1 of my 2-part conversation with him about the good, the bad & the ugly. “JJ Reflects” on
#SundayNight
at 7pm on
@AsaaseRadio995
. Repeat at 7pm Tuesday.
The most corrupt people in Ghana go to church every Sunday. They are also in your Mosques.
Abuse is covered up by the church.
Babies/girls and women are raped
Politicians spend all their time stealing
Yet none of these matter simply because they are not gay. This is laughable
I sense your anger young man. Have you applied for NABCO? NABCO is part of the programs the government put in place to curb youth employment and so far it’s been successful. I believe your frustration can be channeled into something productive there. Cheers.
The trick to this is setting boundaries right from the start. It was really important to me right from the first day to show them that I wasn’t about that life. And it stayed so. You go once, you’ll keep going. But this is also a bigger conversation about corporate exploitation.
National service is like punishment in this town. You are either learning rhe rudiments if delivery business that you don't want because you constantly have waakye lists or you are not getting paid.
Fam do you know how privileged you need to be to consider roaming Madina market as a life experience?? These people are using someone’s daily life as work experience. 🤭
“Today we had to interact with the ahiafuor and it was really hard to assimilate but we strived” 😂😂
If you ask any Ashesi student or alum, they will tell you it's not money. They will tell you it is some of the experiences they had from school... From taking courses like Leadership and FDE. FDE will have you roaming through Madina Market speaking to Kayaye women trying to
It’s so important to call food by their given names any where you find yourself in the world. They not only identify the food; they also tell the world exactly where it’s from and the history behind. This is why shito shd not be called black pepper sauce or gari cassava flakes 1/
And I know it’s hard and we’re all barely surviving but there is no other option. We need to be a community that helps each other. People are losing their lives over 2ghs. Sounds unbelievable I know but this is a life changing amount of money in most households right now. 14/
I don’t what to say honestly but the community needs to come together bcos these people don’t care. My mom leaves food and gives free groceries sometimes for anyone who needs it and she can barely afford it. We need to help people when we can. 13/
Romantic relationships are just one small part of your life and yet we wouldn’t know because everyday som1 comes up with a stupid scenario. If you go home and your man is hungry but the snail is flying and your mom is in the washer, would you caramelize onions first for your man?
The most important lesson I learnt this year is to never assume that people will do the right thing because that’s what I’d do in that situation. Some people are terrible and have no integrity. Never assume anything.
If you want to be a healthy food blogger and your niche is Ghanaians/Africans, does it not sense to actually learn our food and ingredients instead of finding ways to include chia and inaccessible ingredients in every breakfast dish?
Ghanaians love to confuse humility for foolishness. As soon as you stand up for yourself, you’re a hypocrite. To them you must allow people walk all over you and disrespect you to prove how humble you are.
A few days ago u lot agreed that children were off limits and that Chika was terrible for speaking on children but here we are today. Grown folks are calling a child terrible names bcos a child is expressing emotion the only way they know how. Your rage is fake n for a select few
First the ‘singing’ lady who should have been handcuffed immediately she opened her mouth and now this man. Guinness needs to send Ghana a cease and desist letter immediately.
Millet is a drought resistant crop which means that it is an important tool in the fight against food insecurity, hunger and Climate Change. It is a far too important crop to allow these people anywhere near it. Farmers in semi arid regions depend on it for their survival.
Do you understand how happy this makes me. We know
@manifestive
is always going to show up and show out so we’re good on that. His flow here is impeccable but let’s focus on how adudible he is here. You can hear him so clearly that it allows you focus on what he’s saying.
For those new on here; I am a chef, food stylist & photographer. I’m also a Culinary Consultant. If you’re looking to open a new restaurant and will need help with menu development & engineering, menu costing, recipe development etc. Deets in bio.
Few of my favorite bread photos
May we be released from the shackles of baked beans, subpar mushrooms and toast as breakfast in Ghanaian restaurants. May we find the skill to use indigenous ingredients to create recipes and may we find the time to re work and elevate already existing dishes.
An important thing to note whilst you lot are clamoring for a coup, is that historically the effects of a coups are felt most by the lower class, women and children. The lower class having to queue for food or increased sexual violence against women and girls 1/
Every time there’s a problematic food take on here I learn that some of you have never travelled outside of Accra, or even familiarized yourself with how other ethnic groups cook the same food you claim. It’s actually really sad. Palm oil is what makes Okro soup Ghanaian?
If you’re looking for a personal chef here’s a sample of my work for a client. I’m available to accept bookings from 14th January. Check my bio for everything else I do.
* I didn’t get enough pictures unfortunately so these I took with my phone.
Jealous by Labrinth is perhaps the greatest ballad ever recorded. Such raw emotion and vulnerability. It is in a league of its own. He’s who Jacob Banks reminds me of. So much power and emotion when he sings. Can’t help but feel whatever he’s feeling.
Labrinth prepared me for years for heartbreak so well that by the time it finally happened I knew exactly what to expect. He taught me what a consistent and loving partner should be in Beneath Your Beautiful with Emeli. Be serious.
We need to gather all the girlies and do brunch and unlimited cocktails. Bonus if we also get all female drivers so no one has to drive or worry about safety. The ultimate girls day party if you will.
I think one thing we’ve gotten used to which is insane to me is the sheer amount of noise pollution in Accra. The churches, bars, cars, honking, preachers in buses etc. It’s absolutely insane and you only notice when you get out of Accra.
My cousin died several years ago on Christmas Day. Every hospital they went to refused to admit her because no bed. All she needed was an insulin shot. Just an insulin shot would have saved her. This is not an isolated incident. The system is designed to kill you. Don’t get sick.
“ Only two rappers in Africa. Me and no one in particular and if you no dey barb pardon my vernacular, so spectacular.”
He’s just so special and so talented and just great.
M.anifest single-handedly resurrected rap/hip hop in Ghana with this album. Apae was exceptional but a lot of people really started paying more attention when he released Nowhere Cool. They could not ignore him any longer.
Another way to cut down cost since it’s become so important is to learn how to substitute ingredients. A major portion of our income is spent on food whether we like it or not. Learning to substitute one ingredient for another without having to go out to buy said.. 1/
