A clever way to avoid (to a point) inflation is ONLY buy seasonal foods because it’s simply not an economical option to store seasonal goods - this way you side step speculation and silly costs. Also you avoid processing / transport pricing. Also healthier !
Everything is organized. The system is: grapes go into crusher, fall into first bucket that has a press bag that will separate masses from liquid. With pressing, masses will compact and liquid flows into bottom bucket. When filled will be poured into amphoras.
Ok, Alentejo and maybe Extremadura lamb are world class. And thats just because its something that the landscape gives you. Any cheating or tricks or attempts to alter the process will not be economically viable. Its just more profitable do it well, alongside nature.
