A change of plan today, so I worked from home, prompted by travel challenges. Still going with the meal I prepped yesterday though. Chicken escalope coated with Italian herbs, Parmesan and lemon rind, alongside penne in a homemade spicy tomato sauce Cheers everyone..

Proper prep has started for tonight’s scran. We are having cod & chorizo in a spicy sauce, a kind of stew, or maybe a spicy fish & bean casserole? It hasn’t really got a better name than that, as I’m making it up. It looks and smells great so far though. Cheers everyone..

I’m back in the office tomorrow and as ever, likely to be home late. With this in mind, I’ve banged together a chicken escalope to accompany some spicy pasta tomorrow evening.

Tonight we had roasted chicken thighs wrapped in bacon, with a mixed herb rub, roasted potatoes and veg. It was smashing!
