🥛Why is it some people can tolerate almond milk but have a tough time digesting almonds themselves? The process of turning almonds into “milk” actually can reduce the amount of oxalates in the product. The act of soaking, blending, straining and then heating the almond mixture (sometimes adding calcium-rich additives) changes the nutrient structure. Some people have sensitivities to oxalates which is why a raw almond might be a challenging food for some guts.

We’ve got an egg-cellent way to jazz up your lunch routine! Our Ultimate Soft Boiled Egg Salad packs a serious nutrient punch, covering your protein, fiber, + healthy fat bases while delivering big on flavor. Read below to see how we transform a couple of 🥚s into something you’ll be craving on the regular. Ingredients: 4 large eggs 1/4 cup Greek yogurt 1 tablespoon Dijon mustard 1 tablespoon fresh chives, finely chopped 1 tablespoon fresh parsley, finely chopped 1/2 avocado, diced 1/4 cup cherry tomatoes, halved 1 radish sliced 2 cups mixed salad greens Salt and freshly ground black pepper to taste Optional: 2 slices whole grain bread, toasted and cubed Optional: 1 teaspoon everything bagel seasoning 🧑‍🍳Instructions: 1️. Bring a medium pot of water to a gentle boil. Carefully lower the eggs into the water with a spoon and cook for exactly 3 minutes for soft-boiled perfection. 2️. While the eggs cook, prepare an ice bath in a large bowl. Transfer the eggs to the ice bath with a slotted spoon as soon as the timer goes off. Let them cool for 2 minutes. 3️. Gently crack and peel the eggs under cold running water for easier shell removal. 4️. In a medium bowl, mix Greek yogurt, Dijon mustard, half the chives, and half the parsley. Season with salt and pepper. 5️. Add the peeled eggs to the yogurt mixture and gently fold to avoid breaking them. 6️. Divide mixed greens between two bowls. Top with the egg mixture, diced avocado, cherry tomatoes, sliced radish, and toasted bread cubes, if desired. 7️. Sprinkle with remaining chives, parsley, and everything bagel seasoning for extra flavor and crunch. 🍽️Dig in!
