It doesn’t matter who does a Forex on the network, it does not need to be the local pub guy but any other entity that uses the same network which will influence the throughput of the whole network. Even the biggest haters of Radix could so far never say anything bad about the actual technology. All the FUD is about adoption, missing T1 exchanges, bridges, delays of delivering the things in the promised timeframe and hype. Everything that is live, is far better than anything you used so far. Really encourage you to give it a go.

The price is guaranteed in the sense that you are able to add a guaranteed result you want to receive back from a trade. In case someone frontruns your tx, your tx will just fail on a network level because your guarantee cannot be met. It’s not an estimated result, it’s a guaranteed result or failed transaction. Meaning sandwich attacks are not possible.
