The value of The Wolseley was in how Jeremy King ran it, and how he looked after his guests. Same for Zedel, The Colbert and others. A very tough morning for him, Chris and his team. I wish them well, I'm sure Jeremy will remain the restaurateur's restauranteur

Brussels sprouts. Don't trim them. Just cut them in half. Blistering pan until they start to buzz. Boiling water, quarter inch, half way up them. Soy, honey and a chilli sauce. Boil mad until sauce is sticky. Plate. Cover in toasted sesame seeds. Be a vegan for a bit. Chill.

I generally don't believe in upselling, most of it is hamfisted and silly, guests aren't stupid. The best way to get more spend from a customer is to make them comfortable and happy so they stay longer and to give them a marvellous experience so I can be sure they'll come back.

The Audley in Mayfair opens today. Good luck to Sacha, David, Jamie and crew there. It's the most spectacular pub development I've seen in years. Definitely go, and have some @SambrooksBrew beer, or a really perfect pint of Guinness. Also the London Dip sandwich by is excellent

Today @laraarogerss opens The Barley Mow, Duke Street, Mayfair for its first lunch service since the pandemic. Stunning job, designed and reimagined by Georgie Pearman at @CubittHouse . Food is by @ben_tish and it's magic. I'll be in for a pint and some oysters this evening.

Very sad about Eddie Large. A regular at @GuineaGrill and a top man, generous, friendly and funny. Hung in the loo is a photo of him slicing the biggest steak and kidney pie ever made. He liked it being there. I guess we shall keep it. Condolences to his family and friends. RIP.
