Instead of using your iPhone to hotspot, plug in with USBC and teather directly.
The connection is 10x more stable... I guess cause the phone is doing less work or doesn't give that strong of a wifi signal or something.

I love the eSim technology but the providers really need to catch up for this to work as intended. I just spoke to Telcel and AT&T in Mexico and neither of them provide a remote way to send you a new eSim when you get a new phone (or lose one).
