There's a difference between killing a major character and a random servant. Both are morally equally bad but the audience won't care about the random servant as much as they would've cared for Laenor. Hence the change, protecting the precious Rhae Rhae at all costs

Changed Alicent's final motivations for Aegon's coronation, something the show had been building on for a long time. They made Aegon even more horrible than Mushroom's fantasies. They showed Aemond wanting the throne when none of this crap happened in the books. The foot scene .
