I’m one happy & fortunate lady. My scan results from Thursday show no lingering or return of cancer. It had consumed my life for almost 2 years; what with symptoms, diagnosis, chemo, radiation and 2 surgeries. I am finally able to fully breathe once again.

My sister’s husband just died of heart condition complications. There were no beds available to him due to unvaxed COVID patients. He would be alive if he had access to treatment, his doctors say.

Doesn’t this look good? Sweet (honey) and sour (lime and rice wine vinegar) chicken thighs with some mild chili peppers slow cooked in a crockpot. Fall off the bone tender. Served over rice with steamed broccoli.
Sautéed scallops tonight on a bed of sesame seaweed with dollops of sriracha aioli and dots of sriracha sauce. Simple and satisfying. Oh, yeah…wine was involved
Grill time! Marinated chicken thighs, eggplant slices with butter/olive oil/Parmesan/lemon and seasoning, baby bok choy, salad and crusty bread. The wines weren’t too shabby either. 😁
Tonight’s dinner: steamed shellfish. Snow crab clusters, lobster claws, local shrimp & clams in a white wine, vermouth, saffron, butter &lemon broth. Asparagus, zucchini & yellow squash quick-cooked in the same broth, toasted 3-cheese bread and a new wine for me! Luscious!
You all who liked my grazing board last night might like this; hubs wanted steak, I wanted something simple, like nachos. This is what I did. (salad on the side). Nachos included black beans, cheese sauce,salsa, spicy peppers, scallions,romaine, yogurt instead of sour cream.
Apologies for a sloppy plate. Forgot to wipe it before taking a shot (wine was involved) but it was delicious. Lemon pasta with clams, shrimp, black olives, spinach, butter, tomatoes, garlic and lemon& wine sauce. Added just a hint of heat that was lovely. Crusty bread & salad.
Dinner! Fresh caught Mahi mahi (this morning!…thank you little local fish market) coated with panko/egg, homemade tartar sauce, smashed baby redskins, sautéed zucchini, wilted spinach with Pernod.
Made something new for me. This is a tortilla pizza; pizza toppings on 2 flame-charred wheat tortillas with fresh tomato, pepperoni, onion and fresh basil. It was delicious. You need 2 tortillas to support the weight of the toppings. All glued together with mozzarella.
Are you tired of my pizzas on the grill yet? Such a lovely day, we just wanted to stay outside and do something simple on the barbie. Had some homemade dough and sauce in the freezer, pepperoni and sausage, an abundance of fresh herbs and veg plus fresh mozzarella. A happy meal!
Can someone give me a link to the perfect, fool-proof pizza dough recipe for a nice puffy chewy crust? I’ve made it at least a dozen times, tweeking it where I thought it needed to be, but I’m still not happy with it. Hubs liked it but I didn’t. *sigh* Was good but not perfect.

Old school tonight. After last night’s response, this is going to be a let-down. Spinach/chive linguine and meatballs with tomato/basil/spinach marinara. Wagyu beef meatballs! Hubs swooned. He likes old school.
Hubs wanted spaghetti and meatballs, so that’s what he got. Sauce was made about a month ago and frozen. It was easy to defrost and simmer the sautéed meatballs in it without heating up the house.
My sporadic presence here lately is not intensional. I’m working on getting better as quickly as I can. Don’t you all forget about me! (a prior fig tart I made just to keep your appetites whetted)😆
I have posted a lot of whole roast chicken photos (like last night😁) but I think this bird was the beauty queen of them all. It turned out so picture perfectly. And was so good.
Made chicken thighs with figs, onions and balsamic glaze last night. Trying to use up those wonderful figs before they go bad on me. Never made chicken and figs before.
Local oysters defying the “R” month dictum; my version of Rockefeller. Spinach, onions, mushrooms, cream cheese, Gruyère, Pernod, Cholula hot sauce with Panko on top. Some champagne, cause, why not? My heart, this was good.

Grazing boards for Christmas Eve dining tonight; loin of lamb& lobster claws, Caesar salad, cheese, pâtés, crackers and grapes, stuffed grape leaves, pickled herring, wine and champagne. Merry Christmas everyone.
Baked crusted cod tonight; lemon butter drizzle, Israeli couscous with baby peas, green beans, crusty bread and Franciscan Chardonnay. Full belly and a smile on my face.
Fresh-caught sea bass tonight, lightly baked with some onion, butter, chili and lemon. Light, tender, flaky and very sweet-tasting. Geez, the fish is good here. Happy me.
Slow-grilled chicken stuffed with fresh herbs, mushroom and chicken stock gravy, baby taters, arugula/tomato/avocado/onion salad. My presentation isn’t up to par. Need to get my enthusiasm back. 😊
We wanted clams and linguine. I wanted to step it up a notch or two. Spinach and chive pasta, a beautiful broth of wine, lemon, tomato chunks and parsley and a touch of cream, soft-boiled egg to have a runny yolk over all and salmon caviar. Geez, it was delicious.
BBQ chicken thighs tonight with radicchio/arugula/tomato salad and Yukon gold potatoes swimming in butter. I don’t skimp on butter with a perfect simple potato. It’s comfort food.

Homemade version of General Tso’s chicken. The peppers were only mildly spicy. Sautéed spinach as well as broccoli. Actually felt like cooking tonight.
Tiny portion cut from a huge NY strip (hubs ate the rest) with smashed ricotta potatoes and onion/red wine gravy. No, I didn’t overcook the steak. Just gave the cut end a tiny sear to hold in the juices. It was tasty and I did my best to finish it. 🥺
Just a simple plate of lightly roasted sea bass with homemade herby tartar sauce, salad and crusty bread for dinner last night. You might notice the lack of wine lately. I certainly have.😒
Dinner tonight was chicken parmigiana with cheesy Panko, spinach linguine, tomato sauce made this summer with tons of fresh basil plus toasted chessey bread. Chardonnay was involved. 😁
For today, made a small Beef Wellington. Added a thicker than normal layer of duxelles (mushroom mixture) cuz hubs liked it that way. Also a thinner cut of filet cuz I can no longer eat a lot of beef due to gastric problems. Cabernet reduction sauce & cauliflower/broccoli purée
After several nights of seafood, we went carnivore; NY strip with sautéed onions and shrimp, roasted new potatoes and a big salad. Steak was cast-iron pan seared to a perfect med/rare. A nice Cabernet Sauvignon was enjoyed as well. Life’s good.
We did a whole spatchcocked marinated chicken on ours @ 350° and it was marvelous and juicy. Also toasted some great bread, seared green beans,salad and made chicken broth gravy. Pure yummy meal.
Starting to get appetite back so I splurged with clams in a savory broth with spinach pasta, soft boiled egg and a touch of salmon roe. And a fricking glass of water.
I miss wine. 😕

Slowly getting some appetite back (gastro issues for which I’m being treated) and hubs keeps coming home with great foodstuffs to tempt me. Filet mignon and fresh grouper; so I made surf and turf with some interesting sauces. It was tasty.
Early dinner tonight. Have a medical procedure tomorrow that can’t have me eating 18 hrs prior. Seared fresh tuna with tri-color quinoa, puréed cauliflower with tomato/onion/eggplant, horseradish/caper tartar sauce with a tiny dollop of salmon caviar plus nori seaweed. Wine!!!
Just a grazing board tonight. We weren’t hungry-hungry. BBQ broiled shrimp, Keilbasi, assorted mustards, cheesy cauliflower, piquant peppers, grapes and Gouda, salad and crusty bread.
Today, I met with my oncology surgeon who reviewed my latest pathology reports, who has officially declared me CANCER FREE. I’ve been doing happy dances all afternoon and popping corks. One more small surgery on July 10th to put some things back where they belong and I’m done!!!
Pizza night on the Egg grill. Our 2nd day for outdoor grilling and eating with the unexpected great weather. Pepperoni, to,aloe, spinach, mushrooms. Big salad and Dry Creek Chardonnay as well. Loving this great weather! Treat yourself and eat well.
A plate of lightly baked sea perch, freshly and locally caught. Delicious light and sweet fish, but damn, those little suckers are loaded with tiny bones. Homemade tartar sauce, salad and hearty multi-grain bread with wine. That was the meal.
Dinner! Hubs and I shared this glorious 1 1/2” thick NY strip with sautéed onions with a huge hearty salad. Hubs had a baked potato cuz I only cooked the one steak. I was content.
Made 2 trays of these big fat bad boys. They were luscious and fresh from our waters this morning. Spinach, onion, Boursin cheese, garlic, green Tabasco, Pernod, Gruyère cheese, lemon and uncured thick cut bacon to top. Geez, they were good. 🤪These and a salad was dinner.

Made some batter-dipped chicken in a sweet and sour sauce with Chinese red chili peppers. Sautéed spinach and broccoli on Basmati rice. Didn’t realize how spicy those peppers were because my taste buds are flattened, but still tasty
Dinner! Fresh scallops wrapped in bacon, brushed with a bit of chipotle BBQ sauce on wilted spinach, leftover rice, zucchini, sliced avocado on top of a quick seared pita bread to soak up the juices.
My post surgery dietary restrictions have been eased to allow more variety of soft foods. Made a pot of corn and crab chowder with bacon and crusty bread. Even allowed an occasional glass of wine.
Chicken dinner; glazed wings and drumsticks, baby peppers stuffed with couscous and raisons, topped with mozzarella, radicchio/arugula salad, carrots and peas. Nice hearty multi-grain bread. Talbot Chardonnay. Very tummy-filling.
A big ol’ slab of subtlety smoked prime rib with horseradish/yogurt/honey sauce, scalloped potatoes and broiled zucchini and yellow squash with Parmesan cheese. Salad on the side. Meat and potatoes compliments of my sis and her hubby who were trying out their new smoker. Perfect
Yes, I now have a freezer full of fresh fish due to a prolific fishing neighbor. Took one big sea bass and made a platter of fish cakes. I must say they were delicious. Eggs, panko, mustard, horseradish, mayo, lemon added to the mix. Sent some over to the neighbor as a thank you.
As hard as we try to pull away from the tasty cow bits, the steak just reels me back in. I do try, but here we have it again. Steak, onions, potatoes, sautéed zucchini and spinach, peas with mint
Tonight was roasted chicken thighs with sweet and sour gravy with ginger and turmeric 4 grain rice. Salad on the side. Molasses, apple cider vinegar and a touch of honey made the gravy extra good
Filet mignon with sautéed portabella mushrooms, pomegranate seeds, smashed multi-colored baby potatoes, a fabulous salad, made a wonderful celebration of my latest scan results. I’m still cancer free!!!
Nothing jazzy tonight. Chilly drizzly day. Crazed hearty soup. All the fridge leftovers went into the pot plus frozen turkey stock from thanksgiving. Thickened with cream cheese. Threw in a fistful of fresh herbs last in our pots throughout winter here. Cheesy ciabatta bread. Yum
Just wanted to thank everyone for their great happiness for my happy medical news! You all touch my heart. I think I’ve made a lovely group of friends here who are generously good, kind-hearted people. I thank you for your support and good hearts.

Didn’t feel like cooking, so dinner was tomato/cucumber/onion salad with avocado, crusty bread and cheeses, tuna salad, kielbasa and sauerkraut,mustard and pickles. Kinda cleaning out the fridge before Monday’s final surgery.
Sausage sauce using locally made sausage. The best I’ve ever tasted. Peppers, onions, garlic, spinach and fresh basil were supporting players. Freshly grated Parmesan cheese and whole wheat spaghetti. Salad on the side. A little red wine for me this time.
