Try this modern take on the "Bee's Knees", the La Abeja.
Build into a shaker over ice, 2 oz Fósforo Tobalá Mezcal, 0.75 oz Honey Syrup (2:1),
0.75 oz Lemon, and 1 Dash Angostura Bitters. Steady shake for dilution and serve in Nick-and-Nora glass with lemon coin garnish.
To create the Fósforo Mezcal Tobalá Penca, the tobalá is aged for up to three months in small glass carboys alongside a cooked agave penca slice, giving it a unique savory flavor.
Master mezcalero, Aaron Alva Sánchez, incorporates the cooked agave penca into Fósforo Mezcal by resting the cooked agave in the finished spirit for 1-3 months. This expression is the first of its kind to the U.S. market. Salud!
