Update: I can confirm that all the film grain is GONE. The HDR is nice, but the movie now looks smooth and digital and artificial. For those of us who care about accuracy and believe a 4K should preserve the theatrical product, the (included) Blu-ray is still the best version.
Despite reviews saying the new 4K has been heavily DNR'd, I gotta see it for myself. American Graffiti is my favorite George Lucas movie and I was unable to obtain a review copy from Universal, so I braved the cold desolation of Best Buy (it's a ghost town) to purchase it today.
