Hard to say given that they're using their own renderer. "Full" Bevy does default to x11 (meaning xwayland is required for wayland users), but native wayland support can be opted into by enabling the `wayland` feature flag.
New projects will automatically pick it up. Bevy Plugins / Libraries do not need to release new versions. Existing Bevy 0.10 apps can run cargo update to pick up the changes locally in their Cargo.lock.

As a minor correction: they use Bevy ECS in combination with their own (very cool) renderer. Bevy is a full engine, but it is modular and lets you pick and choose what pieces you want to use!

Bevy can render natively using the platforms preferred API (Vulkan, DX12, Metal, or OpenGL). It also supports web builds using WASM and either WebGL 2 or WebGPU.
