Wild Jabali is hand-crafted on a fruit tree and rose bush laden hillside in the village of Santa Maria Albarradas. Its nose of fresh figs, baked apples, parmesan rind, and palate with notes of sweet violets and tarragon, ends in a creamy finish.

Nestled on the mountainside, often enveloped in clouds, Santo Domingo Albarradas sits above the Tesecoacan River. Here wild agaves, plants and flowers grow in plenty and a small number of families produce mezcal.
